Here’s the blender my mom acquired many years ago. In later years she acquired a food processor and put it to good use.
I recently updated and renamed a favorite recipe of Mom’s–some hot rolls with a cheesy filling. I call them “Hot Surprise Rolls.”
They are good for winter gatherings, such as New Years Eve or New Years Day. You will need a food processor to make them.
HOT SURPRISE ROLLS
Ingredients:
1 lb. sharp cheddar cheese, grated
5 hard-boiled eggs, grated
1 medium onion, chopped fine by hand or with food processor
1 small can chopped olives
1 large red pepper, pureed (about 1 cup)
½ teaspoon Tabasco sauce
About 2 dozen larger hard rolls or “Kaiser rolls,” OR 3 dozen regular-size rolls
Instructions:
- Mix the six ingredients for the cheese spread thoroughly.
- Tear off a sample piece of foil and test size. When you have the right size, tear off some the same size.
- Cut rolls in half and spread mixture between, about ¼” thick.
- Wrap each roll in foil. A lasagna pan, two 9×13 pans, or baking sheets with rims will work well to heat.
(May refrigerate if you want to make ahead of time, if you have room in the fridge.
If refrigerated, remove from the refrigerator an hour or more before heating to get to room temperature.) - Preheat oven to 325 degrees 45 minutes before serving time.
- Put in oven about ½ hour before serving time. Heat for 25 minutes.
- A large stainless steel bowl works well for serving, to retain heat. (If using a glass or ceramic bowl to serve, you may want to fill with hot tap water to warm up the bowl.)
- Leftover rolls make handy snacks. They may be unwrapped and warmed up individually in the microwave.
