I have a Chicken Tetrazzini Casserole that I really like. But it’s kind of time-consuming, so I don’t make it too often. (Anything “tetrazzini” basically just means it has a little vinegar in it.) I quite frequently buy a rotisserie chicken at the store. I love the smell and the flavor. We often have quite a bit left over, and some of it may be a bit dry. I decided that maybe I could devise a quick and easy tetrazzini sauce, using some of the leftover chicken. As it turned out, I really liked it. I found some different options to add to it, to make it into a more interesting sauce.

This sauce can be served over rice or pasta, but while in a hurry one day I decided to just tear up a piece of bread. Now it’s my favorite way to eat it. My husband likes it over toast.

After Thanksgiving we had a couple of little bags of sliced turkey in the freezer, so I thought I would try making the sauce with turkey instead of chicken. I liked it very well using turkey, too, so it’s a very good way to use up leftover turkey from the holidays.
