What’s a party or celebration without chips and dip? We Americans do love our chips and dip. I must say that chips and dip test my willpower to stop.

There’s always an excuse to eat more. After all, if you take a little too much dip, then you must take a few more chips so you won’t waste the dip. Then if you “accidentally” take a few too many additional chips, you certainly must take a little more dip to use up the chips. And on it goes.

The dip recipe I’m offering here has a bonus. Simply by deleting the step wherein you drain the juice from the pureed cucumbers, you can turn this dip recipe into a salad dressing recipe. It’s just that simple.

Have you ever used the phrase “cool as a cucumber”? According to an article called “Cool as a Cucumber” on the acreagelife.com website, on a warm day the inside of a cucumber is actually 20 degrees cooler than the temperature of the air.

In an article called “Cool, Calm, and Collected” on the davidjeremiah.org website, beloved pastor and author Dr. David Jeremiah explains that as far as we know the first time the phrase “cool as a cucumber” was used was by a British poet named John Gay. He died in 1732. He used the phrase in a long, comical poem called “A New Song of Similes.”

In Dr. Jeremiah’s article he advises that those of us who are followers of Christ should ask God to help us evade becoming “hot, harried, and hopeless” because of the troubles heating up in ourworld. We need to stay “cool, calm, and collected” so that we can positively influence others spiritually, focus on the promises of God, and be equipped to stay on course in our race to reach the finish line of our Christian lives. Dr. Jeremiah also makes a reference to a book he wrote, entitled Living with Confidence in a Chaotic World.

Enough about being “cool as a cucumber.” Below is my recipe for Cucumber Dip (and Cucumber Dressing). You can also click below the recipe for a printable copy of it. No double-dipping now!

 

CUCUMBER DRESSING OR DIP

1/4 of a medium onion, preferably red
1 large cucumber, unpeeled
1/2 cup sour cream or yogurt
1/2 cup mayonnaise
2 teaspoons white vinegar
1/2 teaspoon dill weed
1/4 teaspoon salt
1/4 teaspoon pepper
2 teaspoons honey or sugar
1. Chop onion and cucumber in chunks and puree until juicy in food processor.
For dressing, don’t drain mixture. For dip, put pureed mixture through strainer, then drain
thoroughly on paper towels.
2. In a bowl, combine pureed mixture and all other ingredients. Stir well.
